SPINACH AND ‘FETA’ FILO PIE
Serves: 4
Spinach and feta filo pie is a traditional Greek dish, and this almond-based fetastyle cheese works great for the dish, creating a real authentic flavour.
For the feta:
• 70g (½ cup) almonds, soaked overnight and peeled
• 2 tbsp lemon juice
• 1 cloves garlic
• 1 tbsp thyme
• 1 tbsp oregano
• 2 tbsp olive oil
• 1 tsp sea salt
For the pie:
• 1 tbsp dairy-free butter
• 1 tsp nutmeg
• 200g (7oz) spinach
• 1 red onion, sliced
• 4 sheets filo pastry
1 Firstly, preheat the oven to 180°C/355°F/Gas 4. To make the feta, add all the feta ingredients to a food processor and blend until smooth.
2 Next, in a large saucepan over a medium heat, add the butter, nutmeg and spinach, cook for 3-4 minutes until wilted, then remove from the heat. Then add the spinach mix and red onion to the feta, mix well and season to taste.
