Spicy pork tostadas with coriander guacamole

prep 25 min + chilling

cook 20 min serves 4

Juice 1 lime, plus wedges to serve

1tsp smoked paprika

½tsp hot chilli powder

2 garlic cloves, finely chopped

400g lean pork fillet, trimmed, then halved Spray olive oil

250g cherry tomatoes on the vine

8 small wholegrain tortillas

½ small red cabbage, finely shredded

1 small red onion, very thinly sliced

2 large carrots, shredded or grated

1 yellow pepper, thinly sliced

100g low-fat soured cream

Jalapeño chilli, sliced, to serve

For the coriander guacamole

1 small ripe avocado, roughly chopped

1 garlic clove, crushed

2tbsp lime juice

3tbsp finely chopped fresh coriander leaves, plus extra to garnish
