However, they could be in line for an exciting career change, moving out of the sewers and into the restaurant business as a new breed of elite sommeliers. Research from the universities of London, Lincoln, Trento and Vienna indicates that rats are consistently able to distinguish between the aromatic profiles of different wine varieties, specifically four Sauvignon Blancs from France and Chile, and four Rieslings from Germany, France and Austria.
